Tequila Por Mi Amante

In the depths of last winter, I discovered cocktail blogs.  I believe I was looking for some classic cocktail books to pick up when I stumbled on Erik Flannestad’s Underhill Lounge blog and his Savoy Cocktail Book project.  Erik led me to Paul Clarke, whose Cocktail Chronicles is one of my favorite cocktail blogs.   When I saw this recipe, it seemed like the perfect summer project.  Tequila and strawberries – what an interesting and refreshing combination!

Tequila 

Take a quart jar and add the stemmed and halved pint of strawberries.  Fill the jar with tequila. Refrigerate for three weeks.  Strain off the tequila and store in refrigerator.

That’s it, really.  It’s one of the beautiful things about infusions, there’s not a lot of active time.  After patiently waiting three weeks, you’re rewarded with a rosy colored tequila that’s got a pleasant strawberry flavor and has lost a great deal of it’s harshness in the process.  What can you do with this?  Well, a strawberry paloma springs to mind.  What’s that?  Stay tuned…
